For us in the Province of Salzburg, organic food has been the logical choice for a long time, and for this reason the region enjoys the highest density of organic farmers within the EU: 50% of all farmers in the Province of Salzburg farm their fields and meadows organically and produce their products, such as meat, milk, vegetables, fruit, cereal crops, etc., according to the strict rules of the EU Regulation on Organic Agriculture.
The percentage for Austria overall is 15% – the highest proportion by far across Europe as a whole.
In November 2008, following a preparation phase lasting around two years, with the support of the SalzburgerLand Tourismusgesellschaft, the group “Bio-Paradies SalzburgerLand”, an association of organically-certified guesthouses, restaurants, hotels and organically-certified farms offering catering and accommodation, was formed.
Mrs Brettermeier is on the group’s board, and was one of its four founders.
Thus it is only natural that the Gartenhotel Theresia****Superior and Hotel Johann were among the founder hotels right from the outset – together with twenty-five other committed establishments in the Province of Salzburg.
Please also note that only at certified hotels and restaurants, subject to regular unannounced random checks by a control body (in our case “Austria BioGarantie”, code number: AT-N-01-BIO), can you be absolutely certain that “when it says it’s organic, it is organic”.
Each establishment’s certificate number (Hotel Theresia: 4-00746-2014) confirms that it is subject to regular checks.
Our establishment is also a partner in the Austrian organic association BIO AUSTRIA, which guarantees that mainly local organic produce is used.
Only certified establishments may use the composite trademark “BIO AUSTRIA” - patrons and guests can quickly spot that a venue is not genuine if “organic” produce and dishes are offered, but the establishment does not display any organic seal of approval (evidence of certification) – either because it never had one, or the certificate has been withdrawn (due to breach or non-observance of the strict rules).
IN 2002, THE THERESIA & JOHANN WERE THE FIRST HOTELS IN THE PROVINCE OF SALZBURG TO APPLY FOR ORGANIC CERTIFICATION – WHICH AT THE TIME WAS STILL VOLUNTARY – AND IN HINTERGLEMM IT IS STILL THE ONLY CERTIFIED HOTEL AND RESTAURANT ESTABLISHMENT PERMITTED TO DISPLAY THE ORGANIC SEAL OF APPROVAL!
On 1 July 2009, the EU Regulation on Organic Agriculture (anchored in the Austrian Food Codex) is incorporated into Austrian law. From this date, every hotel and catering establishment promoting the word “ORGANIC” in any form whatsoever (e.g. “Organic Corner” at breakfast, “organic” hotel, “organic” buffet, etc.) without holding organic certification will be subject to a heavy penalty.
The national organization verifying the origin of genuine organic products certifying and checking on the delivery and use of all produce in our kitchen.
The THERESIA is the only hotel in Hinterglemm certified with the BIO AUSTRIA guarantee seal!
